Cold Stabilization
A winemaking technique where harmless tartrate crystals and small protein molecules are precipiated out of the wine. This is done by quickly chilling it. Unstablized wine can sometimes become hazy or form cyrstals that are odorless and tasteless, but can cause a negative perception.
